Chicken Kabobs

Chicken Kabob Recipe

 

Ingredients:

Marinade:

3 tbsp extra virgin olive oil

3 tbsp red wine vinegar

2 tsp honey

4 cloves garlic minced

1 tbsp dried oregano

2 tsp dried thyme or rosemary

1 tsp kosher salt

12 tsp fresh ground black pepper

 

For the skewers:

2 lbs of boneless skinless chicken breasts – cubed 1-inch pieces

1 small red onion - quartered into 1-inch pieces

1 red bell pepper – seeded and cut into 1-inch pieces

1 small zucchini green and/or yellow – sliced into ½ inch coins

 

Method

Mix all marinade ingredients into a zip lock bag - add cubed chicken - and put in fridge for 30 minutes – 3 hours

If using wooden skewers – soak in water for 20 minutes

Once Chicken is marinated - thread skewers with meat then veg then meat then veg until skewers are loaded up

Should make about 6 skewers

Heat BBQ to 375 F brush grill with oil

Grill for 10 – 15 minutes turning every few minutes

Internal temp for chicken should be 165 F
