Shrimp Mango Noodle Salad in a Jar

I love this Recipe from Fit Men Cook 

Sauce

2 tbsp of nut butter (your Choice)

4 tbsp white miso paste or substitute low sodium tamari or soy sauce

2 tbsp avocado oil

1/2 tbsp maple syrup or agave (more if you like)

4 tbsp room temp water 

juice of 1/2 a lime

1 tbsp white vinegar

Mix together and set aside 

Salad

3 oz uncooked rice noodles

3 cups of shredded red cabbage

1 1/2 cups of sugar snap peas

1 large red bell pepper diced

1 large mango (about 3/4 cup) diced

1 lb of jumbo shrimp peeled and deveined 

 3 32 oz mason jars (750-825 ml)

Steps

1) Cook noodle to package directions 

2) Set non stick skillet on medium heat, once hot add oil then cook shrimp 6-9 minutes, set aside to cool

3) In the 3 jars evenly divide sauce, Them top with noodles, cabbage. snap peas, bell pepper, mango, and shrimp.

Store in refrigerator for 3-4 days
