Marinated Shrimp with watermelon Salad

Marinated Shrimp and Watermelon Salad
570 grams 16/20 count shrimp – peeled and deveined
Salsa
1 minced Shallot
½ Jalapeno seeded and minced (optional)
Feta cheese crumbled (optional)
2 tsp rice vinegar
1 tsp granulated sugar
225 grams of seedless watermelon cubed into 1-centimeter pieces
1 english cucumber about 7.5 centimeters, seeded and thinly sliced
1 teaspoon of fresh mint leaves minced
½ tsp kosher salt
Combine and let flavours come together for about an hour
Shrimp Marinade
12 grams cilantro minced (optional)
6 grams of loosely packed fresh mint leaves
3 medium garlic cloves minced
2 tbsp coursley chopped fresh ginger
2 tbsp rice vinegar
2 tbsp olive oil
1 tsp Red Thai curry paste
¼ tsp of kosher salt
Combine ingredients in plastic bag, add shrimp and marinade for 30 minutes
Grill shrimp until done and serve with watermelon Salsa
