Lactose Free Muffin Recipe

Lactose Free Greek Yogurt Blueberry Muffins

Preheat oven to 400 degrees F

Ingredients:

1 ¾ cups of flour of choice (I prefer whole wheat)

1/3 cup of brown sugar

1 ½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1/3 cup of lactose free butter

1 cup of lactose free yogurt

1 teaspoon of vanilla

1 egg

1 cup of fresh or frozen blueberries

 

Directions:

Combine dry ingredients in one bowl (Flour, Sugar, Baking Powder, Baking Soda, and salt)

Combine all wet ingredients in another bowl (Lactose Free Greek Yogurt, Lactose Free Melted Butter, 1 Egg, and vanilla

Add wet ingredients to dry ingredients and mix, if a little dry adding more yogurt.

Incorporate the blueberries

Spoon into greased muffin tins, 12 equal parts

Bake in preheated oven for 15- 16 minutes until done
